Horchata (pronounced or-CHAH-tah) is a refreshing non-alcoholic beverage enjoyed throughout Mexico and other Spanish-speaking countries. This cold, creamy drink has a sweet, smooth texture, underpinned by the deeply satisfying taste of toasted almonds and a hint of spice that warms the throat. Just gorgeous!

INSTRUCTIONS

Blend the rice, almonds and cinnamon sticks in a blender or food processor along with the 4 cups of hot water until smooth

Let it sit for four hours or overnight

Strain the mixture through cheesecloth, into a pitcher

Stir in the milk, sugar, and vanilla extract (adjust sugar to taste)

Chill and serve over ice
