The story goes that a bartender in Florida, one Ted Pizio, was told to make peach schnapps (a bit of an old lady drink at the time) more appealing to a younger crowd in the 1980s.
This is when he devised this two-layer cocktail, of which the half at the bottom is apparently the beach, and the half at the top, is, well, the good stuff. A bit of reach to be sure, but we’re gonna give this one to old Ted – he sure managed to give peach schnapps a much-needed PR boost.
