Two bright red Bicicletta cocktails with orange twist garnish

When it comes to the art of unwinding, no one does it quite like the Italians. It’s known as aperitivo hour, and during this time, the spritz cocktail reigns supreme. The Bicicletta (Italian for bicycle) is an aperitivo hour staple, and if you ever find yourself in a sun-soaked café on the Amalfi coast, chances are you’ll be sipping on one.  

Traditionally, the Bicicletta is a blend of Campari and club soda topped with dry white wine or rosé. More contemporary versions, like the one below, take cues from the Negroni and feature dry vermouth instead. Whichever road you choose to peddle down, just remember that the Bicicletta is best enjoyed in the company of good friends and great food.

Chill your glasses for at least 30 minutes before serving.

Twist the orange peel over the glass to release the oils into the cocktail before garnishing.

Fill a short Collins glass with ice

Pour in the vermouth and Campari then add the club soda
